Hi, I am Erin, welcome to my blog! After getting totally fed up with the unhealthy way my family was eating, and with my own lack of energy, I decided to do something about my health. There are lots of very helpful things out there... and also a lot of not very helpful things! Two things, for me, ended up making a huge difference. Those two things? Well- a box, and a blender! What exactly does that mean? I'm glad you asked!
The Box- A box of fruit and veggies! Once I figured out that the bulk of my food intake should consist of fresh vegetable and fruit, I had to figure out how to get that much produce into my meal planning. To be honest, I would plan a main course, (usually meat) then add some canned green beans or corn, and consider that an adequate vegetable! I had to really change that around. At first I just bought some extra veggies at the store, but we weren't getting that much more in our diets... those veggies would just sit in the fridge until I finally used them or threw them out, then I would buy more. Then I decided to sign up for a produce delivery service, and the knowledge that another box of produce would be showing up next week, forced me to use up what I had. I began planning out menus around our produce, and trying new things I had never tried before. I am sure lots of people are great about eating enough veggies, but I had to find a way to force myself, and a regular weekly influx of produce (through delivery, co-op, CSA, or some other source) worked wonders for me. I hope to talk about some of the different options, and review them for you here.
The Blender- That one might not require quite as much explanation. Once I had so much produce to deal with, I had to figure out how to use it up, and as much as I would like to, I just can't chew a salad for every meal. Smoothies to the rescue! I love being able to blend up fresh fruits and veggies into smoothies and whole juices. I have been experimenting with a Blendtec Total Blender, and LOVE it! It started with just smoothies, but I am making soups, dips, nut butters, dressings, whole grain flours and more! It is a huge key to our healthy eating.
